In sensory evaluation, specifically in frozen dairy products, we look at a number of things:

  • Aroma: dairy notes, vanilla, chocolate, fruit, off-flavours
  • Texture and mouthfeel: creaminess, smoothness, iciness, gumminess, firmness, chewiness
  • Flavour: sweetness, dairy richness, flavour balance, taints
  • Meltdown characteristics: melting rate, shape retention, separation

By assessing appearance, aroma, texture, flavour, and melting characteristics, manufacturers can ensure that every scoop delivers the quality and enjoyment consumers expect.
