I am a qualified Mexican brewmaster who enjoys walking the line between science and art in the brewing and beverage world. With over a decade of experience in the industry, I have come to appreciate that they are not just rigorously analyzed products but also artistic expressions of their creators. Having previously worked with FlavorActiV from 2018 to 2020, I am thrilled to return in 2024 with enriched industry experiences. During my time away, I spearheaded brewing projects that clinched international awards in the Latin American brewing scene and served as a testament to our team's hard work and innovation. Now, I bring my passion for sensory excellence to this dynamic and global role. Besides brewing, I like to find joy in life's simple pleasures. I savor my pour-over coffee hot, my mezcal at room temperature, my whisky cool, and my beer in any form. I also like spices in my food. In my leisure time, I am a music enthusiast who loves to listen to music, play instruments, or make noise from any object within reach. I also have a penchant for bad (dad?) jokes and puns - the worse, the better!

What's the most interesting or rewarding challenge you've worked on?

I prefer creating custom solutions over just using standard options. Sitting down to build exactly what is needed is highly rewarding. Recently for a company, that meant designing a complex sensory audit for multi matrix panelists. I also bring that problem solving into my own personal projects, like creating custom water profiles for extracting and tasting the flavours I really like to taste.

If you could eliminate one off-flavour from the world forever, what would it be?

Metallic. It really makes me nauseous.

What's your favourite smell?

That's very difficult to answer. But I like floral, fruity and earthy/herbal notes. Floral I like violets and magnolias. Fruity I like mango, passion fruit and raspberries. Earthy and herbal notes I'm all for rosemary, sandalwood and moss. Those are in top of my head.

What excited you most about your role at FlavorActiV?

Meeting new people and helping them reach their sensory goals. It might sound a bit cheesy, but getting to work directly with customers and tailoring our support to exactly what they need is easily the best part of my role.

WHAT'S YOUR GO TO DRINK?

Another difficult question; but Czech Pale Lagers (Světly Ležák) are one of my favourite beer styles. Scotch whisky, Panamanian coffee are also very close.

Depending the time of the year, but mostly early bird.

FAVOURITE SEASON?

Autumn. Especially coming from a really hit place like Monterrey.

FAVOURITE BOOK OR MOVIE?

V for Vendetta.
