FlavorActiV’s Root Beer GMP Flavour Standard is essential for sensory training and quality control. This standard helps trained tasters recognise and evaluate the presence of root beer flavour, particularly the distinctive wintergreen and medicinal notes, which are often considered off-flavours in soft drinks and carbonated beverages.
This flavour is commonly introduced into beverages due to flavour carryover, a result of poor CIP (Clean-in-Place) procedures and inadequate cleansing between production runs. When residue from previous products remains in the system, it can contaminate subsequent products, leading to unwanted root beer flavour characteristics.

Root beer flavour is a distinctive taste profile characterised by wintergreen and medicinal notes that can appear as an unwanted off-flavour in soft drinks and carbonated beverages. This flavour combines sweet, herbal, and slightly bitter characteristics reminiscent of traditional root beer, but becomes problematic when it contaminates products where it shouldn’t be present.
What Causes Root Beer Flavour in Beverages?
Root beer flavour contamination in beverages is primarily caused by flavour carryover due to inadequate cleaning procedures. This occurs when :
– Poor CIP (Clean-in-Place) procedures : Insufficient cleaning between production runs – Inadequate system cleansing : Flavour residue remains in the processing equipment – Cross-contamination : Previous products leave traces in production lines – Raw material transfer issues : Contamination during ingredient handling
How Contamination Occurs :
When production systems aren’t properly cleaned between different product runs, residual flavours from previous batches can contaminate new products. This is particularly problematic in facilities that produce multiple flavoured beverages, where strong flavours like root beer can persist and affect subsequent production runs.
Why Use FlavorActiV’s Root Beer GMP Flavour Standard?
FlavorActiV’s Root Beer GMP Flavour Standard is a trusted tool for beverage producers aiming to elevate the accuracy and consistency of their sensory panels. Here’s why it’s an essential part of your quality control program :
Accurate Sensory Training Helps panellists learn to detect unwanted root beer, medicinal, and wintergreen notes—typical signs of flavour contamination due to carryover.
Improve Product Consistency Early detection of off-flavours ensures that only clean, consistent, high-quality beverages reach consumers.
Replicate Real-World Faults Formulated to mimic flavour faults caused by poor cleaning (CIP) or raw material transfer, allowing for realistic and effective training.
Standardised and Reliable Manufactured under GMP conditions for consistency and reproducibility across training sessions and teams.
Global Industry Trusted Used by top beverage brands worldwide to strengthen their sensory programs and uphold flavour integrity.
Boost Internal Expertise Enhances the capability of your in-house panel to catch issues before they escalate into costly production problems or brand reputation risks.
How to Recognise Root Beer Flavour : Sensory Terms
Key Sensory Descriptors : – Root Beer : The primary flavour characteristic with complex herbal notes – Medicinal : Pharmaceutical or antiseptic-like taste qualities – Wintergreen : Sharp, minty, and cooling sensations
What are the Professional Applications of the Root Beer GMP Flavour Standard?
The Root Beer GMP Flavour Standard serves multiple critical applications across the beverage production industry :
– Professional tasters and sensory panels utilise it to train experts in identifying, quantifying, and scaling the intensity of root beer off-flavours that result from flavour carryover in soft drink and carbonated beverage systems. – Beverage producers rely on it to ensure high-quality production with consistent flavour profiles that meet industry standards.
Other Information
Several flavours can cause carryover and are dependent on the product that your plant produces.
FlavorActiV GMP Flavour Standards
Only Pharmaceutical Quality GMP Flavour Standards provide sufficient quality for professional sensory panels to train and validate with.
We produce encapsulated GMP (Pharmaceutical Good Manufacturing Practice) Flavour Standards that are safe to both smell and drink. The compounds within our capsules impart the aroma, taste and mouthfeel of a specific defect or positive flavour into a beverage for the purposes of taster training, calibration and quality control.
Our individual flavour GMP Flavour Standards are sold by flavour, each flavour pack contains 5 capsules, each separately blister packaged. Our sensory kits contain a mixture of flavours, each separately blister packaged, read the product description for flavour details.
We ship globally, and have over 20 years of experience at it. Our GMP Pharmaceutical Flavour Standards are produced to the highest standards, and as such, their shelf-life is strong and their quality consistent.
FlavorActiV’s flavour centre is the world’s only pharmaceutically run facility dedicated to the production of flavour reference standards. The Flavour Centre is a state-of-the-art facility housed within the campus of world-renowned Quay Pharma near Liverpool in the U.K.
The Flavour Centre was designed by FlavorActiV from the ground up at the direct request of global customers as they looked to move away from inferior food grade ‘certified flavour standards’ to GMP Pharma, a standard that ensures safe, stable, traceable, consistent and long shelf-life products.
All FlavorActiV’s industry-leading encapsulated flavour standards are manufactured following GMP at our Flavour Centre. All aspects of manufacture are overseen by Quay Pharma who are audited by the U.S. Food and Drug Administration (FDA) and the U.K. Medicines and Healthcare Products Regulatory agency (MHRA). We also welcome customer audits.
Only FlavorActiV GMP flavour standard capsules bear our mark of authenticity.
We brand each of our capsules so that our customers know they’re getting the Pharmaceutical GMP Quality that only FlavorActiV provide.
Industry leading packaging and shelf-life
FlavorActiV flavour standards are blister packaged, which extends shelf-life and protects capsules from potential contamination. The average shelf-life of FlavorActiV flavour standards is 18 months to 4 years, depending on the flavour compounds.
We will never ship in pots or plastic packaging, here’s why…
Blister packaging protects capsules from the environment until they are ready for use. Blister packaging greatly reduces the amount of headspace for possible flavour escape. As each capsule individually blister packaged, making use of one capsule still leaves all others protected. FlavorActiV Flavour Standard packaging is 100% recyclable, as opposed to polypropylene which is not widely recycled.
Pots are semi-porous, they allow molecules to pass through and flavour to be lost, their significant headspace also adds to substantial flavour escape as a gas, even when using just one capsule all those remaining in the pot are exposed.
