The Almond (Benzaldehyde) GMP Flavour Standard is a pharmaceutical-grade sensory reference capsule used by professional tasting panels to recognise and measure the almond /benzaldehyde character in beer and other beverages. Benzaldehyde is the compound responsible for almonds’ sweet, nutty, marzipan-like aroma. The standard is recommended as a reference by the ASBC and EBC and maps to Beer Flavour Wheel descriptor 0224.

Almond flavour is a sweet, nutty aromatic profile produced primarily by benzaldehyde, a compound found naturally in almonds. It adds a marzipan-like, stone-fruit character and is widely used in food and beverage production.

WHAT CAUSES ALMOND FLAVOUR IN BEER?
Almond/benzaldehyde flavour in beverages has three common causes. In beer, it is typically a sign of oxidation and ageing during storage, and it also appears intentionally in some fruit beer styles. In non-alcoholic and soft drinks, it usually arises as carryover when bottling lines aren’t fully cleaned after running cherry or almond flavourings. In coffee, it presents as a sweet, light-brown, woody and buttery aromatic with floral and fruity notes (rose, cherry, apricot). Because it often signals oxidative staling, brewers train panels to detect it during quality control.
HOW IS THE ALMOND GMP FLAVOUR STANDARD USED IN SENSORY TRAINING?
It provides a consistent benzaldehyde reference so tasters learn to recognise and score almond character reliably across sessions and sites. It supports three workflows: panel training and calibration (consistency and accuracy in profiling), quality control (detecting and measuring almond notes in beverages) and product development (balancing flavour in new formulations). Typical detection concentrations range from about 1 µg/L to 10 mg/L.

WHAT ARE THE PROFESSIONAL APPLICATIONS OF THE ALMOND GMP FLAVOUR STANDARD?
The Almond (Benzaldehyde) GMP Flavour Standard is widely used across industries for various professional applications :
Brewing and beverage industry: – Ensures consistent flavour profiles in beer, coffee, and other beverages – Recommended by organisations like the American Society of Brewing Chemists (ASBC) and the European Brewing Convention (EBC)
Sensory analysis: – Used in sensory training programs to help tasters identify and quantify almond-like notes – Included in flavour wheels such as the Beer Flavour Wheel (Number: 0224) and the SCA Taster’s Flavour Wheel under “Nutty Cocoa > Nutty > Almond”
Quality assurance: – Helps detect off-flavours caused by oxidation, storage conditions, or production carryover
Equip your panel with a consistent, pharmaceutical-grade benzaldehyde reference trusted across the brewing and beverage industry. Add the Almond GMP Flavour Standard to your order, or talk to our sensory team about tasting kits, proficiency schemes and panel training tailored to your products.
A : Benzaldehyde is recognised as safe for flavouring use under FEMA/FDA GRAS guidelines when used in small quantities. FlavorActiV’s encapsulated GMP standards are produced to pharmaceutical Good Manufacturing Practice and are safe to both smell and drink at sensory-training concentrations. Concentrated benzaldehyde should still be handled with care, as it can irritate the skin and eyes.
Q: What does almond/benzaldehyde flavour indicate in beer?
A : TIn beer, almond or benzaldehyde character is usually a sign of oxidation and ageing during storage, so it is treated as a marker of oxidative staling in quality control. It can also appear intentionally in some fruit beer styles.
Q: What concentration of benzaldehyde can tasters detect?
A : Tasters typically work with benzaldehyde across a concentration range of approximately 1 µg/L to 10 mg/L.
Q: Is the Almond GMP Flavour Standard recognised by industry bodies?
A : Yes. It is recommended as a reference standard by the American Society of Brewing Chemists (ASBC) and the European Brewing Convention (EBC).
FlavorActiV GMP Flavour Standards
Only Pharmaceutical Quality GMP Flavour Standards provide sufficient quality for professional sensory panels to train and validate with.
We produce encapsulated GMP (Pharmaceutical Good Manufacturing Practice) Flavour Standards that are safe to both smell and drink. The compounds within our capsules impart the aroma, taste and mouthfeel of a specific defect or positive flavour into a beverage for the purposes of taster training, calibration and quality control.
Our individual flavour GMP Flavour Standards are sold by flavour, each flavour pack contains 5 capsules, each separately blister packaged. Our sensory kits contain a mixture of flavours, each separately blister packaged, read the product description for flavour details.
We ship globally, and have over 20 years of experience at it. Our GMP Pharmaceutical Flavour Standards are produced to the highest standards, and as such, their shelf-life is strong and their quality consistent.
FlavorActiV’s flavour centre is the world’s only pharmaceutically run facility dedicated to the production of flavour reference standards. The Flavour Centre is a state-of-the-art facility housed within the campus of world-renowned Quay Pharma near Liverpool in the U.K.
The Flavour Centre was designed by FlavorActiV from the ground up at the direct request of global customers as they looked to move away from inferior food grade ‘certified flavour standards’ to GMP Pharma, a standard that ensures safe, stable, traceable, consistent and long shelf-life products.
All FlavorActiV’s industry-leading encapsulated flavour standards are manufactured following GMP at our Flavour Centre. All aspects of manufacture are overseen by Quay Pharma who are audited by the U.S. Food and Drug Administration (FDA) and the U.K. Medicines and Healthcare Products Regulatory agency (MHRA). We also welcome customer audits.
Only FlavorActiV GMP flavour standard capsules bear our mark of authenticity.
We brand each of our capsules so that our customers know they’re getting the Pharmaceutical GMP Quality that only FlavorActiV provide.
Industry leading packaging and shelf-life
FlavorActiV flavour standards are blister packaged, which extends shelf-life and protects capsules from potential contamination. The average shelf-life of FlavorActiV flavour standards is 18 months to 4 years, depending on the flavour compounds.
We will never ship in pots or plastic packaging, here’s why…
Blister packaging protects capsules from the environment until they are ready for use. Blister packaging greatly reduces the amount of headspace for possible flavour escape. As each capsule individually blister packaged, making use of one capsule still leaves all others protected. FlavorActiV Flavour Standard packaging is 100% recyclable, as opposed to polypropylene which is not widely recycled.
Pots are semi-porous, they allow molecules to pass through and flavour to be lost, their significant headspace also adds to substantial flavour escape as a gas, even when using just one capsule all those remaining in the pot are exposed.
