Geosmin Flavour Standard

Geosmin Flavour Standard

Geosmin is created due to spores produced by bacteria in the soil. Water rehydrates these and then imparts the Geosmin flavour. A source of water contamination – this taint can be imparted to raw water used for production. It can enter into final products for all beverage types due to this.

FlavorActiV’s Geosmin Flavour Standard helps train professional tasters to recognise the potency of Geosmin’s character in food and beverages caused by using raw water in production. The flavour threshold of Geosmin is 20 ng / l.

What is Geosmin Flavour?
Geosmin is an organic compound produced by bacteria and microorganisms, particularly in soil and water. It is responsible for the earthy, musty smell often associated with fresh rain or damp soil. While harmless to health, Geosmin can affect the sensory profile of water, beverages, and food products, making it a critical factor in quality control.

Key Sensory Terms for Geosmin Flavour:

  • Dry Earth
  • Dusty
  • Fresh Rain

What Causes Geosmin Flavour?
The Geosmin flavour is primarily caused by:

  • Bacterial Spores in Soil: Certain bacteria, such as Streptomyces, produce Geosmin as a byproduct.
  • Water Contamination: When water rehydrates these bacterial spores, Geosmin is released, leading to contamination in raw water sources.
  • Algae Breakdown: The decomposition of algae and other microorganisms in water sources also contributes to Geosmin production.

This contamination can transfer into raw water used in food and beverage production, potentially affecting the final product’s taste and quality.

Using the Geosmin Flavour Standard for Sensory Training
FlavorActiV’s Geosmin Flavour Standard is a professional tool designed to train tasters to identify and evaluate the presence of Geosmin in food and beverages. By understanding its sensory profile, professionals can detect contamination early and take corrective actions to maintain product quality.

Benefits of Sensory Training with Geosmin Flavour Standard:

  • Early Detection: Identify Geosmin contamination before it impacts the final product.
  • Quality Assurance: Ensure consistent taste and sensory profiles in beverages.
  • Professional Development: Enhance sensory evaluation skills for quality control teams.

How to Recognise Geosmin Flavour: Sensory Terms
Geosmin has a distinct sensory profile that can be described using the following terms:

  • Dry Earth: A characteristic earthy note reminiscent of soil.
  • Dusty: A musty, dry aroma often associated with old or damp environments.
  • Fresh Rain: The unmistakable smell of rain hitting dry ground, also known as petrichor.

Training with the Geosmin Flavour Standard helps professionals accurately identify these sensory markers, ensuring precise detection and evaluation.

What are the Professional Applications of the Geosmin Flavour Standard?
The Geosmin Flavour Standard is widely used across various industries to safeguard product quality and enhance sensory evaluation processes.

Key Applications:

  • Beverage Production: Detect and address Geosmin contamination in water used for brewing, distilling, or bottling.
  • Food Manufacturing: Ensure raw water sources do not compromise the sensory profile of food products.
  • Water Treatment Facilities: Monitor and manage Geosmin levels in drinking water supplies.
  • Sensory Training Programs: Equip quality control teams with the skills to identify and mitigate Geosmin-related issues.

FlavorActiV GMP Flavour Standards

Only Pharmaceutical Quality GMP Flavour Standards provide sufficient quality for professional sensory panels to train and validate with.

We produce encapsulated GMP (Pharmaceutical Good Manufacturing Practice) Flavour Standards that are safe to both smell and drink. The compounds within our capsules impart the aroma, taste and mouthfeel of a specific defect or positive flavour into a beverage for the purposes of taster training, calibration and quality control.

Our individual flavour GMP Flavour Standards are sold by flavour, each flavour pack contains 5 capsules, each separately blister packaged. Our sensory kits contain a mixture of flavours, each separately blister packaged, read the product description for flavour details.

We ship globally, and have over 20 years of experience at it. Our GMP Pharmaceutical Flavour Standards are produced to the highest standards, and as such, their shelf-life is strong and their quality consistent.

FlavorActiV’s flavour centre is the world’s only pharmaceutically run facility dedicated to the production of flavour reference standards. The Flavour Centre is a state-of-the-art facility housed within the campus of world-renowned Quay Pharma near Liverpool in the U.K.

The Flavour Centre was designed by FlavorActiV from the ground up at the direct request of global customers as they looked to move away from inferior food grade ‘certified flavour standards’ to GMP Pharma, a standard that ensures safe, stable, traceable, consistent and long shelf-life products.

All FlavorActiV’s industry-leading encapsulated flavour standards are manufactured following GMP at our Flavour Centre. All aspects of manufacture are overseen by Quay Pharma who are audited by the U.S. Food and Drug Administration (FDA) and the U.K. Medicines and Healthcare Products Regulatory agency (MHRA). We also welcome customer audits.

Only FlavorActiV GMP flavour standard capsules bear our mark of authenticity.

We brand each of our capsules so that our customers know they’re getting the Pharmaceutical GMP Quality that only FlavorActiV provide.

Industry leading packaging and shelf-life

FlavorActiV flavour standards are blister packaged, which extends shelf-life and protects capsules from potential contamination. The average shelf-life of FlavorActiV flavour standards is 18 months to 4 years, depending on the flavour compounds.

We will never ship in pots or plastic packaging, here’s why…

Blister packaging protects capsules from the environment until they are ready for use. Blister packaging greatly reduces the amount of headspace for possible flavour escape. As each capsule individually blister packaged, making use of one capsule still leaves all others protected. FlavorActiV Flavour Standard packaging is 100% recyclable, as opposed to polypropylene which is not widely recycled.

Pots are semi-porous, they allow molecules to pass through and flavour to be lost, their significant headspace also adds to substantial flavour escape as a gas, even when using just one capsule all those remaining in the pot are exposed.
