FlavorActiV’s Phenolic flavour standard helps train professional beer tasters to recognise and scale the intensity of phenolic character in alcoholic beverages.

4-Vinyl Guaiacol is a colourless or pale yellow oily liquid that has a fermented aroma that is slightly sweet and is naturally extracted in the corn ethanol fermentation volatiles. 4-Vinyl Guaiacol is a significant flavour component used to determine the quality of wine, soy sauce, tea, coffee, cheese, and other food.

In alcoholic beverages – primarily beer – phenolic is imparted by specific yeasts during fermentation. This can either be by design or by accident. For example, certain wheat beer styles use yeasts that are designed to produce very phenolic-flavoured beer. This is a desirable flavour and part of the brand profile. However, for beers that don’t require a heavy phenolic brand profile, the presence of this flavour indicates wild yeasts that have contaminated the brewing process.

Cause of Flavour

For beers that don’t require a phenolic heavy brand profile the presence of this flavour indicates wild yeasts that have contaminated the brewing process.

This flavour can also occur in all beverages due to hygiene related issues – bacteria can impart this flavour into raw materials, dispensing and processing equipment.

Industry leading packaging and shelf-life

FlavorActiV flavour standards are blister packaged, which extends shelf-life and protects capsules from potential contamination. The average shelf-life of FlavorActiV flavour standards is 18 months to 4 years, depending on the flavour compounds.

We will never ship in pots or plastic packaging, here’s why…

Blister packaging protects capsules from the environment until they are ready for use. Blister packaging greatly reduces the amount of headspace for possible flavour escape. As each capsule individually blister packaged, making use of one capsule still leaves all others protected. FlavorActiV Flavour Standard packaging is 100% recyclable, as opposed to polypropylene which is not widely recycled.

Pots are semi-porous, they allow molecules to pass through and flavour to be lost, their significant headspace also adds to substantial flavour escape as a gas, even when using just one capsule all those remaining in the pot are exposed.
